Anchorage Summit Menu Sparks Culinary Curiosity Among Alaskans

The high-profile summit between President Donald Trump and Russian President Vladimir Putin in Anchorage, Alaska, was notably lacking in detailed outcomes. However, one element of the event did pique the interest of Alaskans: a lunch menu that featured a traditional dish known as halibut Olympia.

“It has a comforting, homey vibe, reminiscent of simpler times,” noted Jeremy Pataky, editor and co-publisher of Edible Alaska magazine. “While it isn’t haute cuisine, seeing it featured on a menu for such a significant state dinner was somewhat unexpected.”

The menu was shared by National Public Radio, which indicated that it had been mistakenly left on a hotel printer by the American staff. The menu included a green salad, a “duet” of filet mignon and halibut Olympia, and crème brûlée.

Unfortunately, the dish didn’t get its moment in the spotlight, as the summit concluded early on Friday, resulting in a canceled lunch.

The appearance of halibut Olympia on the menu raised some eyebrows. “In the culinary landscape of what can be sourced from the waters between Alaska and Russia, halibut certainly fits the bill,” Pataky remarked.

Although the dish is enjoyed in various regions and may have been named after a town in Washington state, Alaskans take particular pride in it, with numerous regional variations. Typically, halibut Olympia consists of a fish fillet covered in a mayonnaise-based sauce, topped with cracker crumbs, and baked on a bed of sautéed onions.

Recipes for this dish have been featured in community cookbooks in Alaska since at least the late 1950s, often specifically calling for Best Foods mayonnaise. Some Alaskans recall childhood experiences with the dish less fondly, likening it to tuna casserole.

Chef Beau Schooler of In Bocca al Lupo in Juneau reflected on these memories: “Freezer-burned, squeaky halibut coated in mayonnaise and breadcrumbs, sometimes with bacon,” he recalled.

Historically, halibut were large and abundant in Alaska, often caught by sport fishermen, portioned, frozen, and served regularly throughout the winter. Over the last few decades, however, average halibut sizes have decreased, their numbers diminished, and prices have soared, reaching up to $40 per pound at times.

As tastes have evolved, new interpretations of halibut Olympia have appeared in local restaurants. Schooler’s rendition features salt-brined fresh fish with a sauce made from mayonnaise, crème fraîche, and Dijon mustard, topped with buttery crumbled Ritz crackers and baked over a soubise of onions and cream.

“I think there’s a nostalgic quality to it because people often enjoyed it at friends’ homes or during family gatherings,” he added.
