Nigerian Chef Aims to Create World’s Largest Jollof Rice

On Friday, Nigerian chef Hilda Baci sought to make history with an ambitious attempt to prepare the largest pot of jollof rice ever. Utilizing over five tonnes of ingredients, Baci aimed to showcase the beloved West African dish, which features rice cooked in a flavorful tomato sauce, often paired with meat or fish.

Thousands of spectators flocked to the venue to witness the latest record-breaking endeavor by the 28-year-old chef and restaurateur, a former holder of the world record for the longest cooking marathon, lasting more than four days.

Baci reported that she combined 4,000 kilograms (8,800 pounds) of basmati rice, 500 cartons of tomato concentrate, 750 kilograms of cooking oil, and 600 kilograms of onions in a massive steel cauldron, measuring six meters in both width and depth.

To validate her world record attempt, Baci and her team will need to provide extensive documentation, including photographs and videos of the cooking process. The entire preparation took several hours, with all food generated during the event destined to be given away afterward.

Assisted by ten helpers clad in red uniforms, each wielding large wooden spoons, Baci stirred the enormous mixture as onlookers cheered in appreciation of the dish’s popularity. One observer, Bello Fatima Temitope, 31, a beauty retailer, expressed the communal love for jollof rice, stating its ubiquity in Nigerian households, restaurants, and celebrations. "It’s easy to eat, people like the taste and its texture. Personally, I enjoy the flavor of the tomatoes," she remarked.

Cultural Significance and Varieties

On a nearby stage, Baci’s friends, including influencer Enioluwa Adeoluwa and actress Tomike Adeoye, entertained the crowd with music and dance, celebrating the cultural significance of jollof rice. Although the dish follows a general recipe, variations exist across different countries and even individual households. In Nigeria, it is typically spicy and often served with grilled meat, while the Ghanaian version is milder and may include carrots and peppers, giving it a distinct reddish hue. In Liberia, shrimp and other seafood are common additions, and some Malian communities incorporate bananas for a unique sweet-sour flavor.

Jollof rice traces its origins to the ancient Wolof empire, which once extended from present-day Senegal to Mauritania and Gambia. Historical records indicate that rice cultivation in the region thrived in the 14th century, with residents preparing dishes that included rice, fish, seafood, and vegetables, commonly known as thiebou dieune.

Today, a friendly rivalry exists between Nigeria and Ghana over who has the superior jollof rice recipe, a debate often fueled by social media and culinary competitions. In 2021, Senegal’s jollof rice was included in UNESCO’s Intangible Cultural Heritage List, further highlighting the dish’s prominent status in West African cuisine.
